Why does popcorn pop?
Heat turns the moisture in the kernel to steam. The starch gelatinizes and softens, the pressure climbs to about 135 pounds per square inch, the hull ruptures and the starch expands into a foam that sets as it cools.
Who invented the popcorn machine?
Charles Cretors, a Chicago candy store owner, in 1885. His was the first patented steam-driven machine that popped corn in oil, and he introduced it at the Columbian Exposition in 1893.
