Where does the word barbecue come from?

From the Spanish barbacoa. The Oxford English Dictionary traces it to Hispaniola and translates it as a framework of sticks set upon posts. A popular story about the French barbe à queue, beard to tail, is not supported by academic etymology.

What are the four main styles of American barbecue?

North Carolina, Memphis, Kansas City and Texas are the four commonly named. The first two rely on pork and are the oldest; Kansas City and Texas use beef as well as pork.

What is the difference between grilling and barbecue?

In United States usage, barbecue means cooking meat through indirect heat and smoke. Grilling uses direct, radiant heat and tends to cook meat and vegetables quickly.
