Where does chocolate come from?

Chocolate is made from roasted and ground cocoa beans, the seeds of the cacao tree, a small evergreen native to South America. The beans are usually fermented, then dried, cleaned and roasted before they are ground.

What is white chocolate made of?

White chocolate is made with cocoa butter and milk. It has none of the non-fat cocoa solids of dark chocolate; milk solids take their place, which is why it is ivory in color.

Why does chocolate turn white?

The whitish coating is called bloom: fat or sugar crystals that rise to the surface when chocolate is stored or served improperly. Fat bloom disappears when the surface is lightly rubbed.
